My thought is Jinbei trapped him in a bubble or something and took off..

I personally think that they came to an understanding. Jinbe beats the ever loving shit out of Hordy, Luffy goes and saves his friends. Therefore, in case Jinbe fails, the Straw Hats get out okay, and Luffy can curbstomp Hordy anyway.
